WHAT IS A PEANUT PUMPKIN?
To some this pumpkin might look like it’s in desperate need of a dermatologist. But this French heirloom is actually one of the most unique and delicious pumpkins around! With a delicate pink hue and an almost bark-like covering of “peanuts”, it has some of the sweetest flesh of any squash. So much in fact that the peanut-like growths are actually how this plant stores excess sugar! In 3 to 4 months they’ll grow to to around 11 lbs (5 kg.) in size. In terms of cooking use the same recipes that work for a Cheese pumpkin (a.k.a. Cinderella). But it also has the decorative appeal like other unusual pumpkins such as the One Too Many.
WHY ARE PEANUT PUMPKINS GOOD FOR YOU?
While the sugar levels are slightly higher here they don’t have much of an impact for recipes where sugar is already added. In general this pumpkin has the same health benefits as all other pumpkins. Their seeds are a great source of antioxidants, vitamin E and zinc (and taste great to boot). Their flesh is a great source of fiber, vitamin A, C and beta carotene.
WHEN ARE PEANUT PUMPKINS IN SEASON?
They are best planted in the late Spring after the last frost for a Fall harvest. Stick to areas with a lot of sunlight and soil that drains well.
HOW SHOULD PEANUT PUMPKINS BE STORED?
Once they’re cut off the vine leave them outside in the sun for at least a week to cure. As with all pumpkins store them in temperatures above 45 F (7 C) which means don’t refrigerate them! Clean them with a disinfectant, dry them well and store in a cool, dry place. Don’t let them have direct contact with your floor and position them on their side or upside down. They should keep for at least 2 to 3 months.
