WHAT IS COARSE DIJON MUSTARD?
Moutarde de Dijon was once one of France’s most famous exports. But with 3/4 of the world’s mustard seed being harvested in Canada, our “moutardiers” are now right next door. This coarse ground mustard has a rough, pleasing texture that complements Dijon’s deep flavor.
WHAT RECIPES WILL WORK WITH COARSE DIJON MUSTARD?
A coarse grind, contrary to popular belief, is actually a bit milder the a smooth grind Dijon. This is because additional milling is needing to make the mustard seeds smooth, which in turn releases more volatile aromas and flavors.
- Excellent as a marinade or wet rub (along with some oil or vinegar)!
- Give your sandwich a condiment that stands out for a change!
- Works well as an emulsifier in salad dressing, along with a nice oil (extra virgin olive or a tasty nut extract) and vinegar.
- Incorporate some into your next sauce to give it both balance and a depth of flavor!
