WHAT IS AN EGG CASSEROLE?
Is it a quiche or a casserole? Egg casserole is basically a quiche without its crust. This is a dish that you can cook slowly in your oven but still knock out in about 20 minutes. Our version ups the ante with Blacksticks Blue cheese. This unusual combination is a musky yet friendly blue with a beautiful orange coloration. If you can’t find that specific cheese, you can substitute a Cambozola Black Label.

- What’s the Best Veg?
We use broccoli, peppers, and onions as our vegetable mix. You can feel free to use any other combination that suits you. Zucchini is a good addition or even asparagus. Just make sure the vegetables have similar consistencies for even cooking times. Semi-dry tomatoes add pops of flavor to this dish, so try not to forgo them if possible.
- What’s The Accompaniment?
This egg casserole is excellent with a side salad for a lite lunch or with a nice slice of crusty bread like baguette or ciabatta.
WHAT PAIRS WELL WITH EGG CASSEROLE?
Some would call a casserole with eggs a breakfast dish, so the time of day you intend to serve this recipe influences your decision. If in the morning, a nice fruit salad or compote with a glass of freshly squeezed orange juice is a refreshing side. For lunch try a side salad with some grated Parmesan Reggiano or Comte. If it’s dinner time look towards more mature sides like a cucumber salad with an Asian twist or some green beans sauteed with garlic.
