Danish blue cheese may not seem like the immediate choice for pairing with Italian pasta, but its creamy texture makes it an ideal melting cheese. The pairing of farfalle and spinach in this vegetarian dish really makes it shine.
- Will Any Pasta Shape Work?
This recipe calls for farfalle or bow-tie pasta but penne, shells, fusilli or gemelli would be excellent in this dish as well because of their respective ridges and wells to hold the sauce. You can add meat to this dish by topping it with sliced, grilled chicken breast or grilled shrimp.
- What if I hate spinach?
Then look to other green ingredients like kale, Swiss chard or even escarole.

In terms of wine, the blue cheese is going to overpower everything else in your palate. So sweet port or sherry wines can blend well. Or just give up and stick with a nice sparkling water, never a bad choice. The farfalle and spinach would also work with a a nice simple salad on the side (nothing with a creamy dressing).
