WHAT IS A GUINNESS SAUCE?
This unusual version of chocolate sauce uses Guinness Stout. While there are many soup, broth and lamb stew recipes that benefit from Ireland’s most famous son (give Conor McGregor some more time, he’ll get there), here Guinness is used as a dessert. It has caramel and honey notes which adds new levels of flavor to the sauce. It is a versatile topper for a wide range of desserts. Or try this recipe mixed with milk for a very grown-up chocolate milk. Guinness sauce is also delicious over vanilla ice cream or custard.
SUGGESTIONS WHEN MAKING A GUINNESS SAUCE
- Hard to Get Drunk off this Sauce!
Most or all of the alcohol evaporates during the cooking process, leaving only the flavor of the beer. So our sauce is non-alcoholic. Having said that, we’d suggest against serving this sauce to former alcoholics.
- Be Careful when Reducing
As you reduce any liquid, the flavor becomes more and more concentrated. Keep on eye on your reduction otherwise if it goes to far you’ll end up with an unpalatable sludge.
WHAT PAIRS WELL WITH THIS GUINNESS SAUCE?
More Guinness! Of if you’re looking for something non-intoxicating go with a crisp, dry green apple cider. (written by Chef Stef)
