That book was about remarkable youngsters with mad cooking skills. Some of them, like Amber Kelley, were recruited to be on kids cooking shows on Food Network and other stations. Amber won the premier of Food Network Star Kids. When she was 10 years old she shared this easy and delicious cucumber salad for my book. Even in elementary school Amber was a proponent of fresh food. She entered First Lady Michele Obama’s 2013 Healthy Lunchtime and won. Her refreshing Thai cucumber salad was her way of introducing other youngsters to a dish that balances sweet, spicy, tangy and pungent flavors.
