WHAT IS TOMATO ZUCCHINI SAUCE?
It is a sneaky way to smuggle vegetables into unwilling children’s mouths! This delicious sauce features zucchini and is ideal in the summer when the vegetable is plentiful. And when “plentiful” turns into “I’m sick and tired of all this zucchini”, make and can some of this sauce for the winter months when this local summer squash is no longer in season.
SUGGESTIONS WHEN MAKING TOMATO ZUCCHINI SAUCE?
- Tomatoes in mint condition?
You don’t need to use only tomatoes that are in pristine condition. If you have a few fruits that are a bit past their prime, all the better to recycle them into this delicious sauce. You can remove the skins of the fruits prior to cooking them in this sauce. Some gourmets will dry the skins out in an oven, turn them into a powder and use this seasoning like any other spice. - Canned tomato paste
To avoid that metallic flavor, empty the paste onto the side of your skillet, allowing it to heat your paste somewhat before mixing it into the rest of your ingredients. It removes that the flavor of the can.
WHAT PAIRS WELL WITH TOMATO ZUCCHINI SAUCE?
You can use this sauce on any shaped pasta but we find that those with ridges or creases to hold the sauce are best. Al Bronzo extruded cuts are also always a good choice for sauce adhesion.
