WHAT IS VANILLA ICE CREAM?
See our post about strawberry ice cream for a more detailed explanation on the different types of frozen desserts incorporating air.
SUGGESTIONS WHEN MAKING VANILLA ICE CREAM
- Plain Old Vanilla?
Nothing is more soothing than vanilla ice cream–which can be a pie topper, the base for a sundae or just enjoyed alone. This version is especially good with Guinness Chocolate Sauce drizzled on top. Also the key is good quality vanilla and an egg-based custard. The trick to making this recipe work is to temper the egg yolks before adding them to the hot cream mixture to make the custard.
- Are Beans Really Better?
We strongly recommend using whole vanilla bean for this recipe–you’ll get more distinct flavor and the lovely little black flecks of vanilla that tell you this is the real thing. If slicing open and scraping the beans from a vanilla pod feel like too much work you can buy vanilla bean paste easily in almost any supermarket. Nielsen-Massey is one popular brand.
WHAT PAIRS WELL WITH VANILLA ICE CREAM?
Lemon, mint or cinnamon can all work well as additions. Or get a little crazy. Mix in some savory flavors like wasabi or crispy bacon and maple syrup! In contrast, with all this sweetness going on try to stick with sparkling beverages or something a bit tart like non-sweet fruit juice. (written by Chef Stef)
