WHAT IS UBRIACO?
This aged cow’s milk cheese is traditionally soaked in the grape remnants of wine making. The name “Ubriaco” translates as drunk in Italian. Apparently inWorld War I, Italian farmers started hiding their cheeses in wine barrels. This style of cheese can be found in various versions from the Spanish “Drunken Goat” to white wine Prosecco Ubriaco’s. While many descriptions of Ubriaco will say that it is “bathed” or “soaked” for different lengths of time, that is putting it mildly. Italian producer and cheese ninja Alessandro Carpenado brutally drowns his for almost 6 months.
WHERE IS UBRIACO MADE?
This formaggio is made all over Italy but is most associated with Veneto in northern Italy. What can be said about Venice the city? It is one of the most beautiful cities in the world. And it is sinking, so visit it soon!
WHAT ELSE IS VENETO KNOWN FOR BESIDES DROWNING INNOCENT , HELPLESS CHEESES?
The state or region of Veneto is a powerhouse in wine. But its’ capital city of Venice is known for having ongoing construction issues . Sadly all the contractors involved died 600 years ago. But the wooden foundations that they built for this floating city are starting to break down. To stop this sinking, Venice is being re-built block by block to preserve its’ historic and lucrative (tourists) design. However, just for fun, ask a random Croatian about the original construction of the city. One of the first things you’ll hear is “Do you know that all the trees used were from Croatia, and they never paid for them?!” While it was over 600 years ago, much like forgetting a wedding anniversary, memories linger.
WHAT CAN I PAIR THIS FORMAGGIO WITH?
Like with most washed rinds strong reds like Primitivos, Cabernets or Pinot Noirs work as well as Champagne. For cheese plates it depends on how strong you want to go. If you want an Italian cheese plate that is balls out strong, try pairing Ubriaco with a Gorgonzola Picante and Bitto. For a friendlier mix, try a nice Piave and Parmesan Reggiano.
