WHAT IS NEUFCHATEL CHEESECAKE?
Cheesecake is a dessert made up of a sweetened soft cheese along with your standard fare of cake ingredients (sugar, eggs, etc). Some finicky experts have argued that this dish actually isn’t a “cake” but is rather a pie or a tart or even a custard. So long as your cheesecake tastes delicious though, who cares?! In this recipe, in place of cream cheese, we substitute a different dairy ingredient for our Neufchatel cheesecake.

This New York Style cheesecake is velvety with just a little tang. Neufchatel cheese instead of cream cheese makes it a bit lighter but you won’t taste the difference. We used a topping made from wild blueberries but you can use cherries, strawberries or any other fruit that suits you.

This is the very end of your last gastronomical journey of the day, so make it count! You can pair various fruits as a topping (fresh or chop up a mix of fresh and dry fruits with some nuts sprinkled in to play with texture and the intensity of the flavors).
