It is the beautiful marriage of a velvety Georgia peach to a stunning French Normandy cheese. Grilled peaches are the star of this incredibly elegant summer appetizer. The heat of the grill caramelizes the natural sugars in the fruit which creates a lovely jammy quality. This in turn complements the silky Brillat Savarin cheese. But be careful not to pick a peach that is too ripe, you want the texture to be firm enough to hold up to a bit of fire. If you’re buying this fruit locally, in North America they tend to be in season in July.

Use the grill to make crostini from baguettes cut on a diagonal and brushed with oil. Spread your cheese on the crostini while its still warm to get a lovely semi-melted preparation. Halves work best for grilling this fruit.
