WHAT IS QUINOA CHICKEN FRIED RICE?
It is a low carb favorite recipe of ours! Chef Lorilynn Bauer created this version of fried rice using quinoa instead of white grains. Quinoa adds a slightly nutty flavor to the dish. This ancient grain is more filling thanks to its higher protein content. This quinoa fried rice is a great dish to make from assorted leftovers. Consider using chunks of your Sunday roast chicken for this meal and whatever veggies you happen to have in the fridge.

WHAT PAIRS WELL WITH QUINOA CHICKEN FRIED RICE?
A dry, crisp cup of Japanese rice wine a.k.a. sake would go great with our quinoa fried rice! Pairing sake to food is not for the faint of heart, but this article here is a good introduction. For a good wine pairing, a Riesling, Sauvignon Blanc or Pinot Noir can work. If you are going gluten-free stay away from beer. Want something a bit sweeter but with some kick? Try a nice Chinese plum wine or a glass of French Calvados or Armagnac. Whiskey lovers should look to Suntory’s Toki whiskey (a blend from 3 different distilleries). (written by Chef Stef)
