WHAT IS QUINOA CHICKEN FRIED RICE?
It is a low carb favorite recipe of ours! Chef Lorilynn Bauer created this version of fried rice using quinoa instead of white grains. Quinoa adds a slightly nutty flavor to the dish. This ancient grain is more filling thanks to its higher protein content. This quinoa fried rice is a great dish to make from assorted leftovers. Consider using chunks of your Sunday roast chicken for this meal and whatever veggies you happen to have in the fridge.
SUGGESTIONS WHEN MAKING QUINOA CHICKEN FRIED RICE
- Choose Your Protein
This recipe is for chicken version but you could easily use shrimp or even pork. Because of the extra protein in the quinoa you could go totally vegetarian.
- Vegetables are Your Choice Too
An interesting spin on our”fried rice” is that includes kale instead of bok choy. Swiss chard is a nice substitution as well. Consider adding corn, red peppers or mushrooms. The more veggies the better. For this recipe, try our own recipe for Five Spice Powder.
WHAT PAIRS WELL WITH QUINOA CHICKEN FRIED RICE?
A dry, crisp cup of Japanese rice wine a.k.a. sake would go great with our quinoa fried rice! Pairing sake to food is not for the faint of heart, but this article here is a good introduction. For a good wine pairing, a Riesling, Sauvignon Blanc or Pinot Noir can work. If you are going gluten-free stay away from beer. Want something a bit sweeter but with some kick?
